1st Course: Poached Pear and Beet Salad with Roquefort on Grilled Bread
2nd Course: Grilled Teres Major with Roasted and Mashed Celery Root, Pomegranate Molasses, Apple Fennel and Serrano Relish
3rd Course: Roasted Apple Cake with Bay Rhum and Spiced Whipped Cream
