Course 1: “A Fish Called Wahoo” - Citrus-Cured Wahoo on Wilted Greens, D’Origem Estate Olive Oil & Aleppo Pepper
Course 2: “It’s Soup, Herb" - Chervil and Sorrel Velouté with Fennel Pollen Crostini
Course 3: “Hey There Sweet Cheeks” - Braised Pork Cheeks, Glazed with Black Garlic Molasses, White Bean Hummus & Squash Pickle
Course 4: “Atomic Bombe” - Génoise with Chocolate-Chili Ice Cream Topped with Toasted Meringue
