- 11/2 tsp baking powder
- 11/2tsp baking soda
- 1/2 tsp sugar
- 1/2tsp salt
- 1 cup fresh or frozen sweet peas (thaw if using frozen)
- 1 cup buttermilk
- 1/3 cup ricotta (whole milk )
- 2 eggs separated
- 2 ounces of grated parmesan
- 11/2 Tbs melted and cooled butter
Ahead of class:
- In a medium bowl , whisk together the dry ingredients.
- Thaw peas if using frozen
- Have a small pot of water ready to blanch peas
- Have all ingredients measured out
