Sweet Pea and Ricotta Pancakes

+ Ingredients

Ingredients:

  • 1 cup sifted flour
  • 11/2 tsp baking powder
  • 11/2tsp baking soda
  • 1/2 tsp sugar
  • 1/2tsp salt
  • 1 cup fresh or frozen sweet peas (thaw if using frozen)
  • 1 cup buttermilk
  • 1/3 cup ricotta (whole milk )
  • 2 eggs separated
  • 2 ounces of grated parmesan
  • 11/2 Tbs melted and cooled butter

Ahead of class:

  • In a medium bowl , whisk together the dry ingredients.
  • Thaw peas if using frozen
  • Have a small pot of water ready to blanch peas
  • Have all ingredients measured out

  • Griddle or good pancake pan
  • Mixer
