Walnut Salsa and Roasted Red Onions

+ Ingredients

Ingredients:

  • 4 medium red onions
  • 11/2 Tbsp olive oil
  • 2/3 cup coarsely chopped walnuts
  • 1 red chili, Fresno works or a Serrano
  • 1 clove garlic
  • 3 Tbsp red wine vinegar
  • 1 cup arugula
  • 2 ounces fresh goat cheese
  • 1/2 cup Italian parsley leaves
  • Salt and pepper

Ahead of class:

  • Toast walnuts
  • Have all the ingredients measured out
  • Pre heat oven to 425
